Butter Cookies

During our family Thanksgiving dinner, Grandma Lovey, the founder and face of Chompie's, told me that I would need to make gluten free butter cookies for the holidays.  Butter cookies are another of Chompie's top selling bakery items, and most highly sold item during the Christmas holiday season.  Butter cookies are sold year round, but Chompie's always creates special holiday themed butter cookies around those special times of the year.  Between Thanksgiving and New Years, Chompie's promotes Christmas butter cookies, dipped in dark chocolate and coated with green and red sprinkles.  If I could create a fantastic gluten free butter cookie that would have the same taste, look, and feel as the Chompie's version, we would integrate my cookie into the Orly the Baker/Chompies line year round.

I put my own twist on the butter cookies, with flavors of lemon and almond.  The staff, management, and owners of the restaurant loved the product and couldn't believe it was gluten free.  One of my colleagues said "You can taste the love that was put into these cookies!"  

The gluten free butter cookies have been a very popular addition to the Orly the Baker/Chompies line.  For Valentine's day, we made red and pink colored cookies and dipped them in pink and red sprinkles.  They are a simple cookie that you can pipe in a variety of shapes and there are endless ways to decorate them.
