My SIGNATURE MUFFIN: The Sticky Date Banana Nut Muffin
I've been on a new mission to create some more healthy options for those customers who have gone gluten free with the objective of improving their diet/health. After my tasting party, one of my friends who fits into this category suggested that I make a few products which are less sweet and rich and more healthy and wholesome. This was very important feedback because I want to be able to cater to the wider gluten free community, some of whom can't eat gluten because of intolerance (like celiac) and some who choose to omit gluten from their diet because they want to eat more healthy. The latter won't be lining up to purchase my buttery cookies and pies.
When I made these for Josh's family in Arizona, they flipped! I made 12 large cafe style muffins and by the next day, they were gone. I put extra dates inside these to make them even more "sticky." These muffins are by far the most popular because they are infused with moistness and sweetness from the dates and the bananas, as well as a crunchy contrast from the nuts.
